K-SO-dillas

2 tortillas
350g black beans
1/2 onion
1 dozen cherry tomatoes
1 avocado
1 tsp cumin
1/4 tsp cinnamon
1/4 black pepper
1 tbsp tamari
1 tbsp lime juice
Pinch salt
Fresh cilantro
K-SO Vegan Chili Pepper Queso
- Thinly slice red onion
- Strain black beans and rinse
- Cut cherry tomatoes
- Chop cilantro finely
- Slice avocado into thin strips
- On high heat, heat a non stick pan. Once hot, add onions and fry for two minutes constantly stirring
- Add cumin, cinnamon, black pepper, salt, tamari, and lime juice. Fry for 30 seconds
- Add black beans and cherry tomatoes to the pan. Cook for two minutes, breaking apart the beans and tomatoes while stirring
- Set aside the fried ingredients and wipe the pan dry. Return the pan to heat and place a tortilla for 10 seconds
- Spread a generous amount of K-SO Vegan Chili Pepper Queso across the whole tortilla
- Place a spoonful of the fried ingredients on half of the tortilla, as well as the sliced avocado and chopped cilantro
- Fold over the tortilla. Once starting to brown at the edges, remove from heat and serve
