K-SO-dillas

2 servings:
2 tortillas 
350g black beans
1/2 onion
1 dozen cherry tomatoes
1 avocado
1 tsp cumin
1/4 tsp cinnamon
1/4 black pepper
1 tbsp tamari
1 tbsp lime juice 
Pinch salt
Fresh cilantro
K-SO Vegan Chili Pepper Queso
  1. Thinly slice red onion
  2. Strain black beans and rinse
  3. Cut cherry tomatoes
  4. Chop cilantro finely
  5. Slice avocado into thin strips
  6. On high heat, heat a non stick pan. Once hot, add onions and fry for two minutes constantly stirring
  7. Add cumin, cinnamon, black pepper, salt, tamari, and lime juice. Fry for 30 seconds
  8. Add black beans and cherry tomatoes to the pan. Cook for two minutes, breaking apart the beans and tomatoes while stirring
  9. Set aside the fried ingredients and wipe the pan dry. Return the pan to heat and place a tortilla for 10 seconds
  10. Spread a generous amount of K-SO Vegan Chili Pepper Queso across the whole tortilla
  11. Place a spoonful of the fried ingredients on half of the tortilla, as well as the sliced avocado and chopped cilantro
  12. Fold over the tortilla. Once starting to brown at the edges, remove from heat and serve
