Nachos
2 servings:
200g tortilla chips
1/4 red bell pepper
1/4 orange bell pepper
1/4 green bell pepper
1/4 yellow bell pepper; or 1 whole bell pepper
1 tomato
1/2 onion
1/2 cup black beans
2 avocados
Fresh cilantro
Lime wedges
K-SO Vegan Queso
- On a baking sheet lined with parchment paper, spread tortilla chips out evenly
- Chop bell peppers, tomato, onion, and cilantro
- Add toppings to chips as well as the black beans
- Top nachos with K-SO Vegan Queso
- Broil in the oven on low until nachos brown, about three minutes
- Serve with sliced avocado, fresh cilantro, and lime wedges
