Nachos

2 servings:
200g tortilla chips
1/4 red bell pepper
1/4 orange bell pepper
1/4 green bell pepper
1/4 yellow bell pepper; or 1 whole bell pepper
1 tomato
1/2 onion
1/2 cup black beans
2 avocados
Fresh cilantro
Lime wedges
K-SO Vegan Queso

  1. On a baking sheet lined with parchment paper, spread tortilla chips out evenly
  2. Chop bell peppers, tomato, onion, and cilantro
  3. Add toppings to chips as well as the black beans
  4. Top nachos with K-SO Vegan Queso
  5. Broil in the oven on low until nachos brown, about three minutes
  6. Serve with sliced avocado, fresh cilantro, and lime wedges
